Indian meals and snacks are usually accompanied by many condiments which include freshly prepared chutneys, preserved sauces and pickles. They can be sweet, tangy, and spicy or blend of many tastes. These condiments are prepared from numerous ingredients like fruits, vegetables, nuts, spices and dhal. Some are prepared and consumed fresh while few can be stored. Never the less they are frequently consumed and are an indispensable part of Indian diet. They can be an interesting vehicle to pack attributes of gut health into them.
Increased awareness in health and fitness has created a huge market for nutraceuticals, supplements and functional foods. Probiotic foods are basically functional foods that focus primarily on gastrointestinal health. They contain beneficial microorganisms that qualify as probiotic organisms in defined range of 108-1012 cells/gm. Probiotics are predominantly available as pills, capsules and dairy based drinks.
Alternative novel non-diary “Probiotic Condiments” developed in 2 variants namely Spicy Green Coconut Chutney, and Sweet and Sour Dates Chutney. These probiotic foods are developed as per FSSAI guidelines and are nutritious, they are made from locally available ingredients. These condiments not only qualify as probiotic foods, they are also free from artificial colours and chemical preservatives.
BARC has developed a technology for preparing probiotic condiments in 2 variants which is recommended to enhance gastrointestinal health which can later affect the overall health of the consumer. Consuming daily recommended intake of probiotic organisms in the range of 108 to 1010 CFU per day is positively correlated with intestinal and general well being. This can be achieved by replacing normal chutney with this probiotic condiment. Although probiotics are available in many forms like pills, capsules and dairy based drinks; however, there is an increase in demand for plant-based dairy-free probiotic foods as an alternative source to deliver these beneficial microorganisms. The attempt here is to convert these simple culinary aids (condiments) into power packed “probiotic, ready to eat (RTE), and convenient foods”. They contain no dairy, its plant based, simple yet nutritious and taste blends with Indian household palate.
