INTRODUCTION

'Kinnow' mandarin, the most economically important citrus fruit in India faces trade deficit owing to its perishability and brief harvesting period. The proposed technology addresses this issue wherein the shelf-life is extended up to 45 days at low temperature (8±2˚C) and >85% Relative Humidity (RH). This novel combination of processing and storage reduces post-harvest losses by retaining physicochemical and organoleptic attributes and controlling desiccation and microbial spoilage.

THE PROCESS

The proposed technology includes cleaning, surface hygienization, coating with GRAS (Generally Recognized As Safe) food preservatives, air drying, polishing and storage in Plastic Boxes with proper Ventilation and Hygiene (PBVH). The process provides an economical and commercially plausible method of extending the shelf life of Kinnow mandarin up to 45 days at low temperature (8±2˚C) and RH (>85%). These preservatives are permitted by USFDA as well as FSSAI.
