Banana Juice Extraction Process


A lab-scale process has been developed at BARC for extraction of clear Banana Juice, a potential beverage, from the pulp of ripe banana. The juice which has a distinct banana flavor can be preserved at cold storage temperatures upto 3 months unlike the fruit which perishes quickly. The bio-process achieves a juice yield of around 55% (w/w) while the remaining pulp can be converted into fine banana powder, a by-product which can be used as a substitute for flour in cakes and biscuits.
